Today I want to talk about Kombucha. That is obviously entirely unrelated to these Banana Oatmeal Cookies, however I understand you won't obey.

I like these biscuits a little about the undercooked side, so that I inhale them for 9 or 10 seconds. If you prefer them to be cooked through, I'd take for 10-11 seconds.

YIELD: about 30 biscuits PREP TIME: 10 minnutes COOK TIME: 10 minutes



1/2 cup unsalted butter, at room temperature

1 cup packed light brown sugar

1 large egg

3/4 cup mashed ripe additional resources bananas (about 2 medium)

1 1/2 tsp pure vanilla extract

1 cup pops flour

1 tsp baking soda

1 tsp salt

2 teaspoons ground cinnamon


Preheat oven to 350°F. Line baking sheets with parchment paper.

Scrape the sides of the bowl and then blend in the egg until completely incorporated. Scrape the sides of the bowl again and add in the mashed bananas and vanilla.

Gently add the the flour mixture to the banana mixture and blend until just blended.

Scrape down the sides of the bowl and then stir to recombine.

Use a medium cookie scoop (approximately 1.5 tablespoons) to scoop the dough onto prepared cookie sheets leaving about two inches between each cookie.

Bake in preheated oven for about 9-11 minutes.

Remove cookies from the oven and then lightly press on the shirts of each cookie using the base of a drinking glass. Considering these cookies don't spread much, this will give them a conventional cookie shape.
